12 RECOGNITION OF LOCAL BUSINESS AWARD WINNER
Local Hornsby Butcher, Adam Stratton, of Tender Gourmet Butchery recently led a team of Butchers from across Australia in the World Butcher’s Challenge held in Belfast, Ireland.
The concept of the World Butchers' Challenge is to develop an environment where butchers strive to exceed current industry practice in the areas of general workmanship, meat cutting, displaying and the creative usage of beef, lamb and pork product.
Teams participating in the world challenge were judged and scored based on butchery skill, workmanship, product innovation, overall finish, presentation and/or display.
The Australian Steelers team, led by Adam Stratton, were awarded the bronze medal overall, and also won the categories for best pork sausage, best gourmet sausage, and best hygiene/health and safety.
In addition Mr Stratton was selected as one of the best six butchers in the world.
Mr Stratton’s butchery has won a multitude of Awards, including top honours for beef at the Royal Easter Show.
